My 16 years in public education has revealed countless things, but one of the most important is the vital role family plays in a student's success. In my opinion family meal time is one brick in the family foundation that helps children succeed. This blog is meant to give little tidbits to strengthen your faith and yummy recipes to strengthen your family time.

Light Chocolate Chip Banana Bread
I made this banana bread Saturday morning. It is low fat, easy and delicious! Enjoy!
2 smashed bananas
1/2 cup unsweetened apple sauce
1 teaspoon vanilla
1 egg
1/4 cup buttermilk
1 cup skim milk
1/2 cup sugar
1 teaspoon baking powder
1/4 teaspoon cinnamon
3/4 cup flour
1/4 cup chocolate chips
Preheat the over to 350 degrees. Grease 2 mini-loaf pans. By hand, mix all of the ingredients except the flour and chocolate chips. When they are well blended, add the flour and stir until just incorporated. Split the batter between the two mini-loaf pans. Sprinkle the top of each loaf with chocolate chips. Bake for 20 minutes or until a toothpick comes out clean. Cool and serve!
