Waffles with Vanilla Ice Cream and Hot Syrup
When I was little my mom would make waffles for breakfast. We're not talking ordinary Eggos here. She would whip up golden waffles and top them with a scoop of vanilla ice cream and a drizzle of hot maple syrup. Melting ice cream under steaming syrup was the yummiest thing in the world, and it even got me out of bed on cold winter mornings. Just one taste of it brings back wonderful childhood memories. And don't feel bad about ice cream for breakfast...dessert first thing in the morning is what special memories are made of.
2 cups Bisquick
2 tablespoon vegetable oil
1 1/3 cup whole milk
1 egg
1 teaspoon vanilla
Mix all ingredients in a batter bowl until well combined. Pour in batches into a greased waffle iron. Cook 2 minutes or until golden brown.
Top waffles with a small scoop of your favorite vanilla ice cream and hot real maple syrup.
Enjoy quickly, before all the ice cream melts.
