I love Mexican food, but I don’t love the calories and fat in it. I created this recipe so Dustin and I could enjoy the flavors of Mexico in a healthy and simple dish. I made this meal for him today at lunch and he loved it! I hope you do too! Note: I use frozen Tilapia Fillets from Aldi in this dish. They are inexpensive and work beautifully! Also, I learned my perfect rice technique from Alton Brown.
Serves 3 to 4
Ingredients:
Rice
2 1/2 cups water
1 1/2 cups brown rice (not quick cooking)
1 tablespoon olive oil
1 teaspoon cumin
1 teaspoon dried oregano
1 teaspoon chili powder
Tacos
1 pound mild white fish frozen or fresh
1 16 ounce can black beans drained and rinsed
1 lime zested and cut into wedges
1 ripe avocado pealed, seed removed and cubed
1 splash hot sauce
1/3 cup light sour cream
2 tablespoons light mayonnaise
fresh cilantro chopped
8 whole-wheat tortillas
salt and pepper
Preheat oven to 375 degrees. Bring water and olive oil to a boil in a saucepan. Put rice and rice seasonings into a casserole dish. Pour boiling water over the rice. Cover casserole dish with heavy aluminum foil and place in the oven for 1 hour.
When the rice has about 25 minutes to go, place the fish in a 9*13 baking dish. Sprinkle with salt and pepper. Place in the oven. Bake for 8 to 10 minutes if the fish is thawed, or 20 to 25 minutes if it is frozen.
Place black beans in a small saucepan along with a sprinkle of lime zest, the juice of one lime wedge, salt and pepper. Cook over a low heat until the beans are warm.
In a small bowl combine the avocado flesh, the juice of one lime wedge, salt, pepper and hot sauce. Smash with a fork and set aside. In another bowl mix sour cream, mayo and juice of one lime wedge. Set aside.
When the fish and rice are done it is time to assemble the tacos. Take each tortilla and spread on some avocado mixture and sour cream mixture. Add some cilantro, fish and black beans. Roll them up and use a toothpick to secure them. Add rice to the side. Sprinkle extra cilantro, lime zest and juice over rice. Disfrutar (Enjoy)!
