I love trying different grains in side dishes. Quiona is one I tried and loved! This is a recipe I created for a light and healthy summer salad. You can substitute all kinds of veggies and herbs. Be creative and enjoy!
Serves 2 to 4
Ingredients:
1/2 cup quiona
1 cup water
1 cup chopped seedless cucumber
1 tablespoon minced onion
1/4 cup finely chopped sun dried tomatoes in oil
1/3 cup crumbled feta
3 tablespoons chopped fresh mint
3 tablespoons chopped fresh parsley
2 tablespoons fresh lemon juice
4 tablespoons extra virgin olive oil
Salt and pepper
Bring water to a boil and add quiona. Let it simmer until all liquid is absorbed. Let quiona sit for 10 minutes. In the mean time make vinaigrette. Pour lemon juice in a bowl with a pinch of slat and pepper. Whisk quickly as the oil is added. Continue whisking until dressing thickens. Add all veggies, herbs, cheese and vinaigrette to the quiona. Mix well. Serve at room temperature.
