Blueberry Coffee Cake
This is a delicious recipe for a good old fashioned blueberry coffee cake. I just made it this morning, and all Ridley and I can say is...yum!
Cake
2 tablespoons melted butter
1/2 cup whole milk
1 egg
1 cup all-purpose flour
1/4 teaspoon slat
1/3 cup sugar
1 1/2 teaspoon baking powder
2 cups fresh blueberries
Topping
1/2 cup brown sugar
1/3 cup flour
1/2 teaspoon cinnamon
1/4 cup cold butter
Preheat oven to 350 degrees. Grease an 8 by 8 baking dish. Mix wet ingredients in a small bowl. Mix dry ingredients in a large gown. Add the wet to dry and stir until combined. Fold in blueberries. Pour batter into the baking dish. Mix brown sugar, flour and cinnamon in a bowl. Cut in butter until crumbly. Sprinkle topping over cake. Bake for 30 minutes or until a toothpick comes out clean. Cool and enjoy!
