The first time I had this casserole my sister-in-law made it for a family dinner. The minute I tasted it, I knew I had to have the recipe. I ended up searching for it on the Internet. I changed a few things for this recipe, but I think it is just as delicious as the first time I tried it. You will love it...even if it isn't very healthy.
1 - 16 ounce bag of frozen broccoli and cauliflower
8 ounces (or 1/2 of a 16 ounce) bag of frozen carrot coins
1/2 cup whole milk
8 ounces of 2% Milk Velveeta, cut into cubes
1 and 1/2 sleeves of Ritz crackers broken into course crumbs
1 stick of butter, melted
Lightly butter a 13 X 9 baking dish. Mix the frozen vegetables together and pour in dish. In a small saucepan melt the cheese with the milk. Mix until smooth. Pour cheese mixture evenly over the veggies. Mix the cracker crumbs with the melted butter. Sprinkle the cracker mixture over the veggies. Bake uncovered for 30 minutes or until the cheese is bubbly and hot.
