Applesauce Oatmeal
This is a delicious healthy breakfast that my husband Dustin really enjoys! I hope you enjoy it too!
Please note: If you do not want to use steel cut oats, use your favorite oatmeal and prepare it according to the package directions. Steel cut is supposedly one of the healthiest oats out there, and I love the consistency.
Serves 4 to 5
Ingredients:
1 cup steel cut oats
4 cups water
1 cup applesauce
2 tablespoons brown sugar
2 teaspoons vanilla
1/4 cup dried cranberries
1/4 cup chopped walnuts
Bring water to a boil and stir in oats. When oats begin to thicken reduce the heat to medium and simmer for about 20 minutes or until it reaches your desired consistency, stirring occasionally. Add the applesauce, vanilla and brown sugar and stir. Spoon into bowls and sprinkle the top with cranberries and walnuts. Add a little warm milk if you want a creamier, thinner consistency. Eat up!
