Ingredients:
1 8-ounce cream cheese at room temperature
2 cloves minced garlic
1/2 cup mayonnaise
1/2 cup sour cream
1 package frozen spinach
1 can artichoke hearts chopped
1/3 cup freshly graded Romano cheese
1 cup shredded mozzarella
Salt and pepper to taste
Combine cream cheese, garlic, mayo and sour cream in a medium size bowl. Defrost spinach in the microwave. Place the spinach in a clean towel and squeeze out all the water. Place the spinach in the cream cheese mixture. Also add the artichokes, cheeses and a dash of salt and pepper. Mix well. I like to use an immersion blender to blend the mixture until smooth, but you can skip this step. Microwave the mixture on high for 3 minutes. Mix well and serve with veggies, bread, tortilla chips or crackers. Reheat the mixture during the party if you want to, but the dip is good at room temperature too. Yum!
